Strawberry Salsa

Sun ripened strawberries are bursting with flavor. Once strawberry season comes around, I cannot stop eating them. While delicious on their own and with dessert, strawberries can also add a lot of freshness to dinner. This simple salsa pairs well with chicken or white fish. Check out the Little River Farm stand’s delicious strawberries at the Fairfield Farmer’s Market. Please be sure to get your protein accompaniment from the Local Catch (seafood) or Truelove farm stand (poultry), also found at the Fairfield market.

Ingredients:

1. 1 quart strawberries, medium dice
2. 1 small jalapeno, seeded and diced
3. 3 tablespoons chopped cilantro
4. Juice of two limes
5. 3 tablespoons chives chopped
6. Salt and pepper

Recipe:

Combine all ingredients in a bowl, add salt and pepper to taste.
Let marinate for 1 hour before serving.
