Shaved Zucchini, Summer Squash & Carrot Salad Tossed in Pesto

Summer squash are so versatile. And when they come, they come a plenty. If you grow them in your garden, I would advise to check on them daily. You may find one the size of your arm if a few days pass without checking! There are so many beautiful dishes that can be made with squash. This one is raw, and looks a lot like pasta. All you need is a vegetable peeler. One of my most popular salads for a summer party!

Ingredients:

  1. 4 green zucchini

  2. 4 yellow summer squash

  3. 4 carrots

  4. 1 pint cherry tomatoes

  5. 1 cup walnuts toasted

  6. 1 cup basil

  7. 1 garlic clove

  8. 1/4 cup parmesan

  9. 2/3 cup Olive oil

  10. Salt and pepper to taste

  11. Start by making the pesto. In a food processor, pulse walnuts, garlic, basil and parmesan.

  12. Start your food processor and slowly drizzle in olive oil until fully incorporated and smooth. Season with salt and pepper. Set aside.

  13. Peel and shave the carrots with vegetable peeler.

  14. Peel then shave zucchini and summer squash to the core.

  15. Half cherry tomatoes.

  16. Toss together vegetables with pesto, salt and pepper to taste!
